How Gio's Came to be.

Our Story

Gio’s is a love letter to the future, written in pizza.

That is what Gio’s means when it says:

Pizza that loves you back.

Gio’s Pizza Co. was born from family and the belief that pizza can be something more than food, it can harbor memories. Gio’s original tagline is Ancient Methods, New Traditions, and that still guides everything. The restaurants are liaisons of the past and shepherds of the future — honoring what came before while creating something new for the future. Serving pizza that tastes better and makes you feel better.

Gio’s was founded by the Thompson family. Rick and John are two Northeastern Pennsylvania locals who built their culinary careers in different parts of the country. John attended Boston University and Fisher College for business, then honed culinary arts in Boston kitchens. Rick attended the Culinary Institute of America and went on to lead respected kitchen teams in Arizona and Northeastern Pennsylvania.

When Rick and John decided to open a restaurant, everything seemed to fall into place. The first location in Clarks Summit was the same building where their Uncle John had operated Donio’s 34 years earlier, and some of his original equipment was still there.

Opening that location in Clarks Summit was about memory, legacy, and fate. From the first moment, it felt like it was meant to be. After refurbishing old relics like Uncle John’s Baker’s Pride oven, replacing broken equipment, and reclaiming the family location, Gio’s was ready to open its doors.

When Gio’s opened in 2022, the mission was simple: make pizza that tasted incredible, looked beautiful, used methods that promoted better gut health and was made with ingredients people could feel good about. Gio’s built a pizza rooted in old-world methods and real ingredients.

But the journey was not easy. The first year was filled with adversity. Still, through amazing customers, consistency, and individuality, Gio’s slowly built a reputation.

 

Awards

In 2023, Gio’s New York-style pizza finished as #9 on NEPA Pizza Review’s list of top pizzerias he tried. In 2024, Gio’s won Bar Pazzo’s Big Monday with Lackawanna County’s first New Haven-style pizza. In 2025, NEPA Pizza Review honored Gio’s again, naming its New Haven-style pizza #1 and its Sourdough Sicilian #1A among the top-rated pizzas he ate that year. For 2025-26 Times Leader named best round pizza Northeastern PA. 

Rehoboth Beach

In May 2024, Gio’s opened its second location in Rehoboth Beach, Delaware, taking over Uncle John’s longtime local favorite, Casa DiLeo. That location was deeply personal and carried the purpose of keeping the legacy alive. John Thompson had helped run the front of house there from 2010 to 2012, and 12 years later, Thompson had the chance to return and serve the communities of Rehoboth, Dewey, and Lewes.

Dickson City

In July 2025, Gio’s opened its third location on Commerce Boulevard in Dickson City, next to Texas Roadhouse, bringing the brand to a quick-service format with pizza, sandwiches, and approachable offerings for busy families.

A fourth location is also on the horizon.

Through every location, the mission stays the same.

It is about making people happier through pizza. It is about giving families a better pizza experience. It is about serving pizza with soul. It is not about the easy solution. It is about the right one.

Because nothing worthwhile comes easy.
